Job purpose

Chef De Cuisine is responsible for the culinary operations of the designated Chinese outlet, including all food production, menu developments, food purchase specifications, and recipes. The role supervises, mentors, and motivates staff while maintaining the highest professional standards of food quality and sanitation.

Duties and responsibilities

Ensure Compliance to Rules and Regulations

  • Ensures compliance with all NagaWorld’s standards or relevant industry standards during all aspects of work
  • Ensures all employees adherence to NagaWorld’s Code of Conduct, Internal Rules, and Regulations at all times

General Job Functions

  • Supervises the work of the kitchen staff on a specific shift to ensure food preparation, organization and presentation standards are followed
  • Trains staff in accordance with planned training programs and corrects production errors/methods as found necessary
  • Maintains waste at a minimum and determines that portion control is followed to ensure that the required food cost percentage is obtained
  • Initiates and participates in creative selling, merchandising, decoration and presentation ideas
  • Ensures that all culinary products are visually attractive and eye appealing by checking and testing on a regular basis, and prepared in an appetizing manner
  • Ensures all menu items are in strict adherence to the authentic specialty cuisine of the outlet
  • Participates in preparing and maintaining recipe files
  • Any other tasks assigned

Qualifications

  • High School Graduate or equivalent education required
  • Minimum 5 years of relevant experience in Hong Kong cuisines, especially Cha Chaan Teng, preferably in a 4-star or 5-star hotel environment
  • Mandarin Language proficiency and English Language proficiency is a plus

Working Conditions

This position may require extended working hours and may include evenings, weekends, and public holidays.
